If I update or delete a template I've sold, what do buyers get?

Buyers see your live updates and can clone the latest version. Deleting archives it so they keep the snapshot from purchase. Refunds revoke access.
When you edit a template you've sold, buyers see your current saved version and can clone the latest at any time, at no extra charge. They also keep a frozen snapshot captured at their purchase time, so they can always re-clone exactly what they bought. An editable clone a buyer already made does not auto-update, they would clone again to pick up your changes.
If you delete the template (or the workspace it lives in), it is archived rather than destroyed because it has buyers. They lose live updates and Clone-latest, but keep the purchase-time snapshot, shown in their library as Archived or Source removed. Nothing they paid for is taken away.
The only thing that revokes a buyer's access is a refund or a lost chargeback, which removes the entitlement and deletes their clones of that template. See selling templates.
